Easy Vegan Hot Cocoa Mix Recipe

Image
Pre-made hot cocoa is convenient, but not really that great. It's also not vegan. Real, homemade hot cocoa is easy and actually quite nutritious. It's also very simple to make it vegan.  I've seen various recipes that require cooking it in a pot on the stove. Personally, I don't want to use a pot and cook it on the stovetop for every cup or two.  You can make your own dry mix in advance and then just use a tea kettle, coffee maker or the microwave to make each mug full as desired.  It's easy to do.  Ingredients 1 cup unsweetened cocoa powder 1 cup sugar substitute, like sucralose 1 Tbl soy protein isolate 1/2 tsp salt 1/4 tsp cinnamon 1/8 tsp nutmeg In a resealable storage container mix together all the ingredients. Store in a cool, dry place.  When you're craving a cup of hot cocoa, heat 10 oz. of water, either in a mug in the microwave or using a coffee maker or tea kettle and then pour it into the mug.  Add 2-3 Tbls of the pre-made mix and stir unt...

Vegan Chocolate Dice Cookies Recipe

Image
I recently purchased soy protein isolate from a popular internet retailer. My motive was simply to incorporate more protein into my diet in an effort to speed my recovery from and improve my performance with exercise.  What I discovered is that it's also a great ingredient for vegan baking. It can be used to replace eggs as a binder and it can also help create a chewier/denser texture for vegan cookies and brownies.  Various sources indicate that it also helps produce a moister/lighter finished product, but I didn't find that to be true in my experience.  I wouldn't recommend it for vegan cakes or muffins. Unless you want them to have more chew. But I do like it for cookie and brownies. It might also work for low carb vegan breads, but I haven't tried that yet.  The first time I used it was when I made corn muffins. They came out nice, but I prefer my version without the soy protein isolate. Those were lighter and had a more tender crumb.  The second time ...

Chocolate FIlled Almond Cookies Vegan Recipe

Image
Did you know that you can make a really good vegan chocolate sauce using just three ingredients? You can even use this same method to make a thicker, ganache like chocolate. All it takes is water, cocoa powder and sugar substitute.  You can use this method to make hot cocoa, pie fillings, garnishes for cookies and more.  I made some simple vegan thumbprint almond cookies and then topped them with the ganache.  It sounds like it should be difficult, but it's not.  Ingredients for the Vegan Chocolate Ganache 1/3 cup water 1/3 cup sucralose Cocoa powder Instructions to make the Ganache In a small sauce pot heat the water and the sucralose over medium low heat. Slowly whisk in the cocoa powder in 1 tbl increments until the desired thickness is achieved. Keep in mind it will thicken a little more upon cooling.  Ingredients for the Vegan Almond Cookies 1/2 cup ground almonds 1 can chick peas, thoroughly rinsed 1/2 cup old fashioned oats 1/2 cup sucralose 1 tbl...

How to make Perfect Vegan Sugar Free Jell-o Instant Pudding

Image
There are many internet solutions for using Jell-o instant pudding mix to create a vegan version. Almond milk on its own doesn't really work quite right.  Some have suggested just using less almond milk, but that results in a lesser amount of pudding than the package promises. It's also too thick.  I've made it with tofu , black beans, and even chick peas. All these methods  work to varying degrees. However, they don't 100% achieve that true pudding texture. They also tend to separate over time if you don't consume it quickly.  But I've since hit upon the most perfect version possible. Best of all, it's also the easiest and the most pudding like. It's pretty much the exact same thickness and texture as if you were to make it using cow's milk. It's also just as stable if you save some for later. It retains its perfect texture.  It only requires two common, extra ingredients. It's also made the same way as the package directions suggest. No foo...

Creamy Red Pepper Sauce

Image
bestvegetarianveganrecipes.blogspot.com I have a little bit of a sauce obsession. When you mostly eat broccoli, beans and tomatoes, it's essential to be able to create a wide range of sauces with all different flavor profiles so that you can still really enjoy your food.  So, I spend a lot of time coming up with all manner of sauces and purees in order to make humble vegetables into scrumptious meals.  In this case, I went with an Italian/Spanish inspired creamy red pepper sauce. It's sweet and spicy and smooth and creamy. The perfect dressing for a simple plant-based meal.  Ingredients 1 medium red bell pepper, chunked 3 cloves garlic, halved 2 jalapenos, deseeded and chunked 1 serrano, deseeded and chunked 1 1/2 cups water 2 heaping spoonfuls cream cheese 1 tsp canola oil 1 tsp smoked paprika 1 tsp basil 1 tbl salt 1/2 tsp black pepper You can use regular cream cheese or vegan cream cheese. Chick Pea Cheesecake Recipe

bestvegetarianveganrecipes.blogspot.com  This is a dessert I never would've dreamt up just a year ago. But ever since I learned how to make chocolate chip cookies with chick peas , I've been experimenting with using them in all sorts of other recipes. In this case, an irresistible marble cheesecake.  The more amazing part, besides the use of chick peas in a cheesecake, is the fact that it's actually very easy to make. And unlike traditional cheesecake recipes, it's nearly foolproof.  This recipe is egg-free and sugar-free, but not dairy free. Vegan cream cheese would probably work, but I have yet to try it.  Ingredients for Filling 1 can chick peas, thoroughly rinsed 1 room temp 8 oz block of cream cheese 2/3 cups allulose 1 1/2 tbls cocoa powder 1 tbl vanilla extract 2 tbls baking powder 1 tsp salt 1-2 tbls almond milk Ingredients for Crust 1 cup old fashioned oats 1/2 cup roasted almonds 1/2 cup allulose 1 tbl almond milk 1.2 tsp salt Make the crust first because i...
