French Black Beans and Mushrooms with Gravy Vegan

There's something really satisfying about mushrooms treated in a french preparation. Wine, mustard and thyme are one of those classic combinations that evoke a fine dining experience without the fine dining price tag. 1 pint baby bella mushrooms chopped small 1 can black beans, rinsed 3 cloves garlic, minced 1 tbl tsps soy sauce 2 tbl spicy mustard 2 tsps  prepared, jarred, horseradish (horseradish, vinegar and salt) 1 tbl hot sauce 1/4 cup dry white wine 2 tbls olive oil 2 tsps dry thyme 1 tsp black pepper 2 tsps salt When you cook down mushrooms some kind of molecular magic happens that turns bland, spongy fungi into a delectable culinary powerhouse. Add some wine and a few other components and you've got a deep, dark saucy ragout that will make anything you cover it with irresistible.  It's a simple mixture that yields complex tastes and textures.  It won't take up a lot of your time to make, but you'll have a hard time not eating it all in one sitting.  Start yo

Meat Selection

I wish someone could explain to me people's mentality toward animals. It completely baffles me. There are certain animals that are pets. Dogs and cats the most notable. These animals should not be harmed and should be treated with respect. These animals actually have laws in place to protect them. That's wonderful. I like dogs and cats and don't want to see them harmed.

But how do other animals wind up with the bum rap of being abused, tortured and eaten and no one thinks twice? What did cows ever do to us? Or chickens either?

All around the world people proclaim themselves "animal lovers" and champion the rights of pit bulls and stray cats. yet those same people have no problem at all with the fact that thousands upon thousands of food animals are mercilessly abused and slaughtered daily so that they can have hamburgers and chicken fingers.

What's most baffling is the selection process. How did dogs and cats get so lucky. Both of which would eat us if they were hungry enough. While the gentle cow, who would never eat a person is badly mistreated daily and no one cares.

I don't understand the logic. It makes sense to be upset that there are puppy mills and dog fights. That I understand. But if that upsets you, why doesn't cow suffering and pig suffering and chicken suffering bother you as well?

The weirdest part is that some animals are both pets and food. Rabbits and pigs being the most common.

And ducks. How do people eat duck? They're adorable.

I guess the vast majority of the world lives in a perpetual state of delusion. They think they are humane and care about animals. But nothing could be further from the truth.
