Sweet and Spicy Tomato and Kidney Bean Salad

One of the best things about not eating meat is that you can make meals without having to actually cook anything. Just cut, combine and stir. Whether you're in a hurry, feeling lazy or just want that fresh crunch, a plant based diet gives you the freedom to cook without literally cooking. 

Especially as the weather gets warmer, it's convenient to just cut and combine. It's also surprisingly tasty to keep those fresh ingredients in their natural state. 

The textures and flavors are vibrant and exciting. 

A little salt, a little acid, some  fat, a spice or two and you're all set with a delicious meal. 

1 can dark red kidney beans
1 pint cherry tomatoes, halved
1 poblano pepper, diced
1/2 yellow onion, diced
1 long hot pepper, diced
1 serrano, minced
3 cloves garlic, minced
2 tbls olive oil
2 1/2 tsps salt
1 1/2 tsps crushed pepper flakes
1 tsp black pepper

Toss all ingredients together in a large bowl. 

That's it. You're done. Enjoy your not so hard work.

Egg Free Onion Rings

I visited our local Cheeburger again today for lunch/dinner or as those in the know call it, Linner. It was a lovely Sunday afternoon at the Jersey shore. The morning had been cloudy, but the sun had come out by the afternoon. We'd finished our food shopping and were trying to decide what to eat. I had an onion ring craving. A rare craving, but an intense one. Now since I refuse to eat eggs there are very few onion rings I'm willing to consume. But Cheeburger onion rings are egg free and they taste really good too. Especially with those dipping sauces they have. Which are delicious. Super fatty, but mmm mmm good. Totally addictive. I like the creamy jalapeno. I avoid the vegetable dip as it contains eggs. Why I don't know, but that's what their website tells me.

I really like that their veggie burger is also egg free. That is also hard to find. It's ironic though, that for their egg free onion rings and veggie burger their bun contains eggs instead. How sad. I get my veggie burger on rye bread instead because of this. The wrap is also sans egg, but not as good a deal price wise. It's tasty and lower fat, but more expensive.

I love, love, love their salad. Whether it comes free with the platter or you purchase it for $2.99 as a side to an entree it's a great salad. Full of romaine, black olives and sprinkled with cheddar and jack cheese.

Am terribly curious to try their veggie burger salad. It sounds really tasty, but salad doesn't tend to fill me up. So I am always hesitant to order it. There's nothing more frustrating than leaving a restaurant still hungry.

Now the platter comes with a choice of fries or onion rings on the side. But when you order your platter with onion rings you only get just a very few cause that's all that fits on the plate. But if you order your platter with fries, which a lot of fit on the plate and then order a separate side of onion rings it's really good. Especially if you have someone to share them with. A medium size gets you plenty of rings to eat there and some to take home with you as well. You get lots of everything.

Normally on Sundays it's really crowded. If you go during lunch or dinner it's total chaos. But if you go in between the two its nice and quiet and relaxed.
